SENSORY AND BIOCHEMICAL QUALITY CHANGES OF CATLA (CATLA CATLA) IN IMMEDIATE AND DELAYED ICING AND AT AMBIENT TEMPERATURE

Changes in the quality of Catla (Catla catla) stored immediately (0 h) ice, after six (6) hours ice and at ambient temperature soon catch was investigated. The samples were examined by sensory (organoleptic rigor mortis progress) biochemical parameters (total volatile base nitrogen, trimethylamine nitrogen pH). proceeded faster fish (28°C-30°C) than those (0°C). duration full stage total period 8h 13h for 77h 127h (both immediate delayed icing) respectively. Organoleptically, acceptability varied between 16-20 days both iced storage conditions 12-13.5h temperature. fishes organoleptically just acceptable on 16th day unacceptable 20th day. values (TVB-N), (TMA-N) pH 18.9 mg% (0h), 16.74 (6 h), 5.40 4.86 (6h) 6.93 6.65 respectively time rejection ice. Those 28.44 mg%, 6.22 7.18 rejection.
